Kid Friendly Roasted Chickpeas (vegan, gluten free, grain free)
My daughter, Little A LOVES this recipe and it's so simple and easy that it's just perfect kid food! My daughter gobbles them up in minutes. I like to make them as part of her dinner then I save the left overs for the next day as her snack. I like to use two cans of chickpeas because my husband really loves them as well. I recently introduced this recipe to my parents and even my skeptic father loved them! My mom is making them weekly now!
2 cans of chickpeas (if I'm going to use canned anything, I make sure it is a lined BPA free can. Eden Organic is a great brand).
2 tablespoons of coconut oil
Salt, garlic powder, cumin and turmeric
Preheat oven at 350 degrees. Drain and rinse chickpeas. Put chickpeas in a big bowl and stir in coconut oil and as much of each spice as desired. Spread chickpeas on a baking sheet and bake for 45 minutes or until crispy.
See how easy that is! They have a great crunchy/snack factor. I guarantee you can't stop eating them once you start.
Next time I'm going to dress them in apple cider vinegar and salt to make salt and vinegar chickpeas! Yum!
