What They Ate Wednesday: Christine from Just Glowing with Health

For breakfast:

 

 Apple cinnamon oatmeal, with strawberries and pomegranate seeds (recipe here:  http://justglowingwithhealth.com/raw-vegan-apple-oatmeal/ )

For Lunch:

Jicama Carrot Herb Salad:

1 small jicama, carrots, celery, mint, basil and cilantro with citrus dressing.  Citrus dressing: juice of lemon, lime, orange.

For Dinner:

20 ounce green apple, lemon celery, mint juice,

followed by:

Carrot Beet Pasta with a Curry Tahini Sauce with a mixed green salad

For the pasta:

2 Carrots, spiralized

2 Persian Cucumbers, peeled and spiralized

1 small beet, peeled and spiralized

1/3 cup cilantro, chopped

1/4 cup green onions, chopped

sesame seeds for garnish

 Directions: 

 Place all of the above ingredients in a medium sized bowl.

 For the dressing:

2 Tbsp raw Tahini

1.5 Tbsp lemon juice

1/4 tsp curry powder

1Tbsp coconut aminos 

pinch of chili flakes

1 small garlic clove

3-4 Tbsp water (more if you desire a thinner consistency)

 Blend above ingredients well in a mini food-processor pour over veggie pasta and mix in thoroughly.  Garnish with sesame seeds.
