Recipe: Pasta Fagioli

Hi all! Today I'm sharing a recipe I've enjoyed since I was a kid. This recipe satisfies everyone in my house and is one of my favorite comfort dishes. Enjoy!

Pasta Fagioli (vegan, gluten free, plant based)

1 box of gluten free pasta
3 cans of Eden organic cannelini beans
1 jar of sauce (use fresh sauce if you have)
Olive oil
Basil and Italian spices
Ground pepper
Himalayan sea salt
4 cloves of garlic

Coat soup pot with olive oil on medium heat
Add chopped garlic and let cook until fragrant
Add tomato sauce along with Italian spices, salt, pepper and basil
Let that simmer for about 5 minutes
Add beans and let simmer for another 5 minutes
Add all the pasta and cover with water. Season with more salt and drizzle with olive oil. Bring to a boil.
Once boiling turn back down to medium and let cook for about 15 min. Stirring every so often.
Season to taste.
