I love durian! Not many people make it past the sour, leaking gasoline, stinky onion smell. They say you either love it or hate it. Like I said, I love it! Yes, it definitely stinks up my whole house when I have it, but the smell doesn't bother me as much as it does my husband, who by the way, won't go near it, never mind try it. I find it to be creamy and rich, the perfect base for a plant-based pudding or ice cream. Here is my recipe for my favorite way to enjoy durian.
I like to buy durian frozen and already sectioned. This was is a lot less messy, and definitely the easier option. I have opened my own before and it's just as good that way, but a little more work.
1 durian pod
1 frozen banana
Chocolate or Vanilla in any form (I like to use Chocolate Sunwarrior Protein for an extra boost. But vanilla powder or cacao work just fine)
Water (just enough to loosen it up)
Blend all ingredients in a high speed blender. Pour into a bowl and top with your favorite dried fruits, shredded coconut, cacao nibs, hemp seeds, or whatever you feel like!
My durian pudding topped with raisins and goji berries. Perfection!

Topped with Purely Elizabeth granola, Monukka raisins and Purple Mulberries.
