Happy first day of Spring, love bugs! We have some warmer temps earlier this week (more like just temps above 40) but today we are getting snow! Boo! I am patiently waiting the real arrival of Spring so I can enjoy beautiful nature again and all that comes with it!
In honor of the first day of Spring, I wanted to share a recipe for a blended green soup that tastes like Spring! I love blended soups, they are a fun easy way to get lots of greens in at a time. I learned about them from Dara Dubinet, she is the queen of greens! ;)
Springtime Green Soup (raw, plantbased, vegan, gluten free)
1 yellow bell pepper
1 handful of fresh parsley
1 teaspoon of dill
1/2 cup of fresh spinach
2 stalks of celery
Salt to taste
Garlic powder to taste
1 teaspoon Coconut Aminos
As much water as you would like depending on how thick or thin you would like
Add all ingredients to a blender and blend. If you have a Vitamix, you can blend for a few minutes to warm the soup up. I like added flax crackers and raw kraut on top when finished.
