Hi! I hope you had a nice weekend! The weather is finally feeling like Spring here, so we have been busy! Last week, Little A was on "Spring Break", so I tried to make the week special by doing some fun things.
Last Monday, my parents came up and we took Little A to the zoo, she had a blast!
Later in the week, we went on a lunch date to Fresh Press Juice Co! She had banana and strawberry "nice cream" and I had the same but in a parfait topped with raw granola, mango and coconut. Yum! The "nice cream" is just blended fruit. So good!
On Friday, we had lots of errands to run, I enjoyed this snack on the road! This electrolyte drink was very good, no sugar and pretty clean. I need extra electrolytes without having a colon.
Friday night we made Food For the Immortals Superfood Cookie Mix. These cookies have superfoods and medicinal mushrooms in them. Made with quinoa and are gluten and soy free. I made them with a flax "egg" and coconut oil. They were pretty good for a "healthy" cookie.
On Saturday, we went down to my parents, but first a stop at the health food store for lunch! Little A had a little mix of beans, carrots and olives with a rootbeer kombucha. I had a coloa kombucha with a salad that had romaine, purple cabbage, carrots, peppers, artichoke hearts and tofu in it. We also had Nori Power Wraps.
We went to a local craft show that supported all local crafters. Here's what I left with: a knitted hat and headband for the baby, a beautiful ceramic mug that a friend from high school made and was selling, and a grain free, vegan, gluten free cookie (I bought two but Little A ate hers while walking around).
When we got home we made gluten free vegan pizza! (This is on my 31 while 31 list!). Mine was topped with sauce, garlic, broccoli rabe and olives.
Sunday was a beautiful relaxing day. We spent most of it outside enjoying the sunshine. This was a plate of crudites with hummus and guacamole we shared (all organic).
Then we layed out some towels and soaked up some Vitamin D! Easy like Sunday..
