I took these pictures on a family walk last week. We try to go for one every night that the weather allows. Little A rides her bike and Baby S is in the stroller.
Another exciting note, I won this awesome snack pack from Deans Market! I entered one of their contests on Instagram and won all this plus a tent and some cool outdoor stuff.
T and I FINALLY got a date night together! I am embarrassed to say we haven't had one since before Baby S was born! Over 9 months ago! Eek! So we took a trip to Bareburger in Montclair. I had their sweet potato and wild rice burger on a collard wrap. We shared sweet potato fries and kimchi slaw.
T (who is sticking with the plantbased life) had a black bean burger on a sprouted bun with sprouts and guac and fries that we shared. ;)
After that we took a walk and hit up some cool stores. We stopped in Mundo Vegan for dessert to go (we will be going back for lunch with the girls soon). This brownie was amazing!
On Saturday, we headed to the shore for birthday party for my Brother-in-law. My Mom made vegan sandwiches for us: avocado, kraut, chipotle veganaise and tomato on gluten free bread. I also had roasted veggies on the side.
I brought gluten free vegan chocolate chip cookies that I made with the Eat Pastry dough. So easy to make and so good!
Sunday was rainy and boring! Hence, my Snap Chat filter fun! Oh and check out my new Kale shirt, T bought it for me on our date night from Urban Outfitters.
We ran into Whole Foods for lunch (needed to get out of the house). I made a mediterranean feast! This is lentils with peas, eggplant with tomatoes, falafel with tahini, hummus and dolmas.
For dinner we had stuffed artichokes and sweet potatoes. These are a meal in themselves. T makes them with gluten free bread crumbs and Miyokos cashew mozzarella. Maybe he will share his recipe with you all! ;)
Finally, I had to share this beautiful dish I made last week. This was so simple. In tomato sauce I added white beans, kale, olives and a chopped tomato. I let it cook down and topped with Miyokos vegan cashew mozzarella. This cheese has become our favorite. We don't enjoy it as much cold, but when heated, melted or added to a hot dish, it's pretty amazing!
