I have made this recipe a few times and it's always a hit. I like to bring it to Summer barbecues or make a big batch for us and have it with dinner for a couple nights. It is super easy to make and delicious!
Vegan Pasta Salad (vegan, gluten free)
2 boxes of gluten free pasta
4 stalks of celery chopped
1 small red onion chopped
4 carrots chopped
1 small bunch of Italian parsley chopped small
1 jar of green olives chopped
1/4 cup Dijon mustard
1.5 cups of vegan mayo
Salt and pepper to taste
Boil pasta and run under cold water until cooled. Place in fridge and chop all ingredients. Once the pasta is cold, add all ingredients and mix. For seasonings, season to taste. Add more mayo or mustard as needed. Sometimes I find I need more, sometimes less. Let marinate in the fridge for 3 hours before serving.
