Summer is HERE!

Hi! I hope you had a nice weekend! We have been very busy with Little A finishing up pre-k and Baby S' first birthday just a few weeks away! We are having a party at our house.. Watermelon themed! I can't wait to share it with you all although I can wait for my baby girl to be a year old! Anyway, Little A finished school on Friday so we have officially started our Summer fun! 

 On Friday, I received my June Goddess Provisions box. The theme this month was "Dream Time'" and it came with all these beautiful dreamy products.  Since it was Little A's last day of Pre-k we wanted to do something special so we took her to the local (small) amusement park. She really enjoys rides (doesn't take after me), so she had a blast. Baby S and I enjoyed watching! Ha ha!

 For dinner I made curry jackfruit from The Jackfruit Co. mixed with purple cauliflower, peas, rice, and topped with cashews and scallions. This was a hit!

 Saturday morning, I woke up and did a workout while the girls ate. Then I made a green smoothie with lots of spinach and Sunwarrior's new Illumin-8. I will be sharing my review on that soon! 

 After that, we ran errands and grabbed lunch at Whole Foods. Since Whole Foods is down the road from us, this is actually our easiest option. I made a salad with arugula, Indian rice, cauliflower in tahini sauce, blackened tofu and Chana Masala.

 After that, we hung out in our yard while T made pizzas on the grill! Mine was a brown rice crust topped with tomatoes, sauce, spinach, mushrooms, onions, olives and Miyokos Mozz (vegan, cashew cheese that melts!).

 My nieces came over that night and the big girls roasted Dandy (vegan) Marshmallows on the fire pit. They are so magical together!

 Sunday morning, I had a tonic before starting the day: Dandy Blend, Coffee Blast (not coffee), Coconut Creamer and Stevia. Baby S had peas and cantaloupe. 

 We ran a few errands and stopped at Whole Foods for lunch again. This time I had a kale salad, falafel, hummus, peas and lentils and blackened tofu with a Harmless Harvest coconut water.

 We spent the rest of the afternoon outside again, hanging out by the garden. 

 Then I made dinner which was quinoa pasta, broccoli, tomatoes, mushrooms, olives, zucchini and fresh basil.
