Hi! Happy May! :) I hope you had a nice weekend! Here is a recap of ours.
On Saturday, we went down to the shore to visit family. In our travels, we stoped at the Seed to Sprout Bakery!
I had carrot "lox" toast and a Matcha Coconut Milk latte.
After that, we had lunch at my Mother-in-law's, she made a big salad. The day was mostly travels around visiting family. Nothing too exciting for you guys! ;)
On Sunday, we ran some errands and then went to a local street fair. Lucky for me, it happened to be going on right next to Fresh Press Juice Co. The girls and I shared an Acai Smoothie.
For dinner, my amazing Sunday chef (AKA: T!), whipped us up a delicious meal: artichokes stuffed with gluten free chickpea breadcrumbs and Miyoko's vegan mozz and quinoa pasta with eggplant, roasted peppers, chickpeas, zucchini and portabella mushroom. So good!!
