Hi! I hope you had a nice weekend! Today I’m bringing you a delicious smoothie bowl and I madr today for lunch. Little S and I both had a bowl each, and both loved it! So this recipe is kid friendly, nourishing, and filled with vitamins!
Persimmon Pumpkin Pie Smoothie Bowl
(vegan, gluten-free, kid-friendly)
1 small persimmon (the ones with a flat bottom because you can eat the skin and eat them hard)
1/2 cup of pumpkin purée (make sure you use unsweetened)
2 frozen bananas
1 cup if cashew milk (or any non dairy milk)
A sprinkle of pumpkin pie spice
Granola (I use Purely Elizabeth)
Some persimmon slices
I also added some cacao cashew clusters. This is optional. Some other great ideas for toppings would be coconut shreds, cinnamon, almond butter or peanut butter. Use what you have!
Blend all ingredients that are NOT toppings in a high-speed blender. Poor into a bowl and top with your toppings. Enjoy!
