What They Ate Wednesday (AND A BONUS GIVEAWAY): Betty Rawker

Today I begin a new series of posts called "What They Ate Wednesday", a new spin on the "What I ate Wednesday" posts! I am having friends and fellow bloggers give us a break down of what they ate in a day, along with some awesome recipes! I am thrilled to be doing my first guest blog post! Yeehaw for RAW! My name is Andrea Wyckoff, and I have been blogging away at BettyRawker.com, and now recently PacificWanderlust.com, for the past few years, and I started following Lauren online about the same time I started BettyRawker.com.  I absolutely adore Lauren. She is such an inspiration to me!  I also deal with irritable bowel disease as a secondary condition to my disease of Ankylosing Spondylitis (a nasty painful inflammatory disease that is crippling my spine).



Us gutsy girls have to stick together!! For me, a grain free, low starch, mostly raw diet, has been a total lifesaver, backsaver, and gutsaver. I really do love the foods I eat, and especially love the way they make me feel. And because the diseases I suffer from are so severe, I never ever, ever, ever cheat. For me to feel my ultimate best, I found I must avoid all grains, refined sugars, soy, corn, legumes, dairy, nightshades, but I am still eat and enjoy a rainbow of different foods each day!

Today I went berry picking bright and early at an organic blueberry farm! I ate at least 4 cups of fresh blueberries while I was out there picking! They were so perfectly sun ripened and sweet! One of my favorite summer treats!!


On the way home from berry picking I picked up a quart of carrot juice from Trader Joes and drank 2 cups of organic carrot juice. I am such a believer in the natural sun screen protecting power of fresh juices (especially carrot) and a refined-sugar-free diet!



For lunch I had my favorite raw vegan salad rolls with my go-to sesame sauce. This is seriously one of my most favorite things to eat, EVER! See the full recipe here.




Then for dessert I had one of my Raw Vegan Chocolate Caramels. I pretty much always have a stash of raw chocolates in the freezer, you know, in case of emergencies! See my favorite raw chocolate caramel recipe HERE




And for dinner I had my favorite Grain Free Vegan Pad Thai! See my recipe below.




Vegan/Paleo Pad Thai
  • Servings: 2

  • Time: 30 minutes

  • Difficulty: easy

Low/No Starch Paleo Pad Thai

  • 1 packet of Miracle Noodles

  • 1 cup broccoli (fresh or frozen)

  • 1/2 cup mushrooms, sliced

  • 1/2 cup red cabbage, sliced thin

  • 1/2 cup shredded carrots (cut on a veggie peeler like this one)

  • 1/2 cup chopped fresh herbs (mixture of Thai basil, cilantro, mint)

  • 1 radish, sliced thin

  • garish: sesame seeds (black & white)

Simple Sauce

  • 3 Tablespoon coconut aminos*

  • 1 Tablespoon lime juice (or rice vinegar*)

  • 1 Tablespoon coconut nectar (or other sweetener)

  •  1 teaspoon toasted sesame oil

  • (optional: 2 Tablespoons of almond butter)*

Rinse Miracle Noodles well, they are stinky right out of the package. Heat a small pot of water and quickly boil Miracle noodles for a few minutes to remove the funny taste and strain.

In a large sauté pan heat the broccoli, mushrooms, simple sauce, and toss in drained and pre-boiled noodles. Sauté over medium high heat for about 10 minutes until broccoli and mushrooms are well cooked, and noodles are hot and well coated in sauce. Taste test to make sure you have enough sauce coverage, add more of the simple sauce ingredients if needed!


Remove from heat. Toss in shredded carrot, cabbage, radish, and herbs.  Serve and garnish with sesame seeds.
