Vegetable Soup to Warm Your Soul (vegan, plant based, gluten free)
1 head of broccoli chopped
4 carrots diced
4 stalks of celery diced
1 bag of frozen peas
5 small potatoes diced
1 onion diced
2 cloves of garlic diced
1 small knob of ginger
1 tbsp of Coconut oil
1 tbsp miso (I like soy free chickpea miso)
Heat coconut in soup pot and add garlic, onions and ginger. Cook until fragrant. Add potatoes and a cup of water to steam. Let potatoes cook, stirring occasionally. Once soft add carrots, celery, and broccoli. Cover with water and salt to taste. Add frozen peas and bring to a boil. Once boiling lower to medium heat and cover. Let cook until all vegetables are soft. Add other seasonings to taste and lower heat. You can let the soup sit on low for a few hours to get more and more flavorful. Before serving stir in miso.
Serve hot with gluten free croutons, quinoa or whatever your fancy is! ;)
