Valentine's Day Recipe: Goji Pomegrante Macaroons

Today I bring you a lovely recipe from my friend Joanna Steven. This is a perfect, easy to make recipe to share with your loves on Valentine's Day! Enjoy!


Goji Pomegranate Macaroons 

(raw, vegan, gluten free)


Sometimes, there's no time to churn ice cream or blend up a cheesecake. You want a sweet treat, and you want it now. Enter coconut macaroons... They blend up in seconds in the food processor, and since they are bite sized, you can pop one in your mouth and go on with your day!


Choose your favorite chocolate to dip in. These macaroons are subtly sweet, and a little tart, so a sweeter chocolate will really hit all your taste buds for a decadent experience every time.




1 cup coconut flakes

2 T Navitas Naturals pomegranate powder

1 T Navitas Naturals maca powder

1/2 t cranberry concentrate

1/4 c. Navitas Naturals goji berries

1 T coconut oil, melted

1/4 cup maple syrup


4 ounces of your favorite chocolate




Break the chocolate into pieces, and put them in a bowl. Set the bowl over a pan of water, making sure the water doesn't touch the bowl (or use a bain-marie). Bring the water to a boil. The chocolate will melt but won't get hot. You can also turn off the water and wait for the chocolate to melt slowly, if you're patient!


Add all the other ingredients to a food processor, and pulse until the mixture is cohesive enough. Pack 1-2 tablespoons into a small ice cream scoop, and set each macaroons aside.


Dip each macaroon in the melted chocolate to cover the bottom and a little up the sides. Set each dipped macaroon on a plate covered with parchment paper, and refrigerate until the chocolate has hardened. Enjoy!
