Yesterday I put together a delicious little lunch for Little A and I. Little A enjoys making zucchini noodles, so it was nice to have my kitchen helper doing the work! ;) Here is the recipe..
Zucchini Avocado Pasta (raw, plant-based, gluten free)
2 zucchini (made into noodles with a Spiralizer, Veggetti, or Mandoline)
1 whole ripe avocado
2 tablespoons Coconut Aminos (can use Tamari or Braggs Aminos instead)
1/2 cup of fermented sauerkraut (I get mine from Whole Foods, a local brand. Trader Joes has a great one too!)
1 tbsp of Nutritional Yeast
Mix all dressing ingredients in a bowl. Throw zucchini noodles in and mix well. Enjoy! ;)
