Recipe: Chickpea Salad (plantbased, gluten free, high raw)

Hi Everyone! I made this yummy chickpea salad recently and I thought you'd all enjoy! I usually come up with recipes as I am making them, this was one of those times. Enjoy! ;)



Chickpea Salad (plantbased, gluten free, high raw)


2 cans of chickpeas (I like the Whole Foods brand which are now BPA free)
2 pickles (I used Bubbies raw pickles)
2 tbsp vegan mayo (I like Hampton Creek)
1 small handful of fresh parsley chopped
1 tbsp Coconut Aminos (or Bragg's, Tamari, etc)
Generous sprinkles of garlic powder, sea salt and onion powder to taste
Romaine Lettuce hearts

Drain and rinse chickpeas and add to large bowl. Mash the chickpeas leaving some whole. Mix in all other ingredients except romaine and stir well. Let sit in fridge for a few hours until cold. Serve on romaine lettuce boats or any bread or cracker of your choice. Great on top of a salad as well!
