Hey! I hope you had a nice weekend! We are getting ready for Halloween over here! I can't wait to share pictures of the girls in their costumes, they are too cute! I am also planning on a post about how we "celebrate" Halloween as healthy as possible and what vegan candies we like best. For now, here is an update from my weekend.
Speaking of, I surprised Little A with these Theo Coconut Bites when I picked her up from school on Friday. She always enjoys my Friday surprises.
On Saturday, we had errands to run, which included Target. I got myself a Kombucha Soda, but honestly, I wasn't a fan of this flavor. I will stick to the Rootbeer and Dr. Pepper flavored ones.
For dinner I made a big batch of Dreena Burton's Smoky Chili from her cookbook: Plant Powered Families. This was a hit all around! I made enough to make tacos with the left overs for "Taco Tuesday!"
On Sunday, I started the day with workout followed by a big smoothie: bananas, frozen cherries, Nature Restore's Beet Powder, Sunwarrior Protein, coconut water and chia seeds.
We celebrated the baptism of my new niece (who was born two days before Baby S). After, we had a late lunch at a local Italian restaurant. I started with some broccoli rabe and grilled veggies which were both delicious!
Followed by gluten free pasta marinara with extra veggies added in. I forgot (because I ate it so fast) to take a picture of the gluten free/vegan cupcakes Little A and I enjoyed for dessert! ;)
