My Plantbased Christmas Eve and Christmas

Merry Belated Christmas, Friends! I hope you had a lovely day with your friends and family. Mine was truly amazing. Every year it just gets better and better. This year especially because I have Baby S and my world feels complete. Here are the highlights from my Christmas Eve and Christmas Day. In-joy! XO

 On Christmas Eve we had a lot of running around to do. First we had dinner with my Mother-in-law and her family. She made gluten free, vegan pasta with vegetables and a salad for the gluten free peeps. (There are a few of us, plus my mother-in-law who eats vegan as well).

 My "gluten free" sis-in-law made these amazing vegan cupcakes that were also gluten free and not to mention, delicious!

 After that, we headed to visit T's Dad's family and then to our final stop, my grandparents house for opening family gifts. We took this picture before leaving, Little A had already changed into her Christmas PJs since we wouldn't be getting home until almost 11pm. 

 Christmas morning was quite magical with two little girlies. I am sure the upcoming years will get even more exciting as Baby S starts to understand Christmas. You can tell by the look on their faces in the top pictures how excited they were. These are the highlights from gift opening. 

 T made Little A vegan, gluten free chocolate chip pancakes! She was thrilled!

 While that was going on, I made my gluten free, vegan spinach lasagna to take to my sister's for Christmas dinner. This was before it was cooked.

 I also made vegan gluten free stuffed mushrooms. I will share both recipes soon!

 Here is my dinner plate, a huge portion of lasagna and some salad. So good!

 We finished off with a delicious peanut butter cup that my sister made. I believe she uses Alicia Silverstone's recipe in The Kind Life. They are to live for!
