Enjoy Life sent me a package last week with their gluten free vegan pancake and waffles mix along with their vegan chocolate morsels, the first thing that came to my mind was chocolate chip pancakes!
As soon as I told Little A my idea she was very excited! I promised her on Sunday morning we could make them (because that's the morning that T is home). She was surprisingly patient about it but that may be because she had the chocolate chips on Saturday on some banana "ice cream" I made her.
On Sunday morning we got up and T whipped up some chocolate chip and plain pancakes for us. Little A devoured hers in record time. Mine were drizzled with pure maple syrup. They were really good! I love that they were light and flavorful. My number one issue with gluten free products is the aftertaste. These were the first gluten free pancakes that didn't have that weird taste. They tasted just like the pancakes I had as a child. Also, they don't require any dairy free milk or a "flax egg" to make. Just oil and water. Super easy. We made enough to have leftovers for today and tomorrow and we still have enough of the flour left for another fun Sunday breakfast.

These pancakes met my standards as far as ingredients go. In fact, all of their products are certified gluten-free and are free-from the top 8 most common allergens (wheat, dairy, soy, eggs, tree nuts, peanuts, fish and shellfish). They are also all verified Non-GMO, certified Kosher & Halal, and do not contain artificial ingredients. The baking mixes are made with ancient grains, contain 5g of plant-based protein per serving, and also contain shelf-stable probiotics that don’t degrade during the baking process. The Dark Chocolate Morsels (all of their baking chocolate actually) is Paleo certified.

Chocolate chips are a staple in any vegan parent's cabinet. Perfect for baking or just as a sweet treat. Little A likes anything mini, so these were perfect for her! They melted nicely in the pancakes too.
