Weekend Eats and Sweets

Hi! I hope you had a nice weekend! We were fairly busy, T is working on getting Little A's new room together, plus we had some errands to run. On Sunday, we had my Sis-in-law, Bro-in-law and nieces over so I haven't had time to blog. So this one is coming a little later than normal and I am also sending out last week's newsletter shortly. Anyway, today I am sharing my food recap from the weekend. In-joy! XO

 Friday was a busy day, so I needed a quick lunch. I made instant oats and added raisins and maple syrup.

 At Whole Foods I grabbed some banana chips that were just bananas and coconut oil.

 For dinner I made sweet potatoes, roasted chickpeas, Hilary's Veggie Bites, guacamole and romaine.

 On Saturday we grabbed lunch at Whole Foods. I had salad bar: white beans, falafel, kale salad and peppadew peppers.

 I also grabbed a Health-Ade Kombucha since they were on sale.Â

 For dinner we made Fajitas! Mushrooms, onions, peppers, salsa and guacamole on Spelt Tortillas. I like the Rudi's organic tortillas because they are just Spelt flour, no Whole Wheat added. Spelt is a form a gluten I can tolerate on it's on, usually they mix Whole Wheat flour in there and that's where I have trouble. These came out really good and were super simple, just cooked in olive oil and added a packet of Organic Fajita seasoning.Â

 On Sunday morning, T surprised up with breakfast from Papa Ganache Vegan Bakery. I had a gluten free everything bagel. Little A had a donut and croisant and T had a gluten free apple crumb muffin. The gluten free chocolate chip biscotti T and I had for dessert and Little A had her Minion cupcake.

 I picked up these goodies at Home Goods. The Bacon flavored coconut chips were on clearance for $3 a bag!Â

And finally, dinner was gluten free quinoa pasta with peas, onions and lots of Nutritional Yeast.Â
