Hi! This past weekend we were snowed in (see my previous post), but we made sure we had lots of yummy food around to keep our tummy's happy! :) We celebrated T's birthday on Monday and I made him a requested dinner. Here is what we ate! In-joy!
Friday, I ran to Whole Foods for some essentials. I got myself an orange juice to keep my immune system strong in this cold weather.
I also picked up this Paleonola which was on sale, it has honey in it, so it's "Beegan". I love it on my smoothie bowls! I need to get more flavors while it's on sale.
This was a smoothie bowl I had with it: blueberries, bananas, baby greens, carob topped with Paleonola, freeze dried bananas and freeze dried apples.
For dinner I made the tempeh saute I made last week (just sauteed with carrots, celery, seasoning and coconut aminos). Served on lettuce leaves with guacamole and kraut.
Saturday we were snowed in, I had a salad for lunch topped with an Engine 2 veggie burger which was pretty tasty. There is also guac, kraut, olives, peppadew peppers and Kite Hill's almond milk cheese.
For dinner we made homemade pizza! Mine was gluten free (I use the Bob's Redmill gluten free pizza mix with a flax "egg") topped with broccoli rabe, olives, sauce and more Kite Hill almond milk cheese.

This smoothie bowl was the same as the other but with dried cranberries instead of apples.
Monday was T's birthday and he wanted pasta for dinner! I made gluten freee pasta with tomato sauce and left over broccoli rabe and veggie "balls". On mine I had more almond milk cheese and of course a side of kombucha.
I made these Superfood cookies for dessert. We stuck a candle in and sung "Happy Birthday". I think he had a nice day! :)
