Weekend Fun at an Organic Farm

Hi! I hope you had a nice weekend and a lovely Eclipse Day! Did you watch? Little A and I snuck outside while Little S was asleep. We had protective glasses, but we still only looked a few times for a few seconds each. It was pretty spectacular! I was so glad I got to experience it with Little A. Hopefully a memory she'll never forget!


Anyway, sorry for the late "weekend" post but we've been busy (as usual). Just getting ready for back to school! I seriously can not believe this Summer is coming to an end already! Sad face!! 

Last weekend, we went to a few fun places and ate some yummy food! Starting Saturday with this Pitaya bowl that Little S and I shared. I've gotten T hooked on acai and pitaya bowls now. He wants to go all the time to get them! 

We didn't do anything fun on Saturday. Just some back to school shopping and relaxing at home while the girls played on the slip and slide. For dinner I made tempeh fajitas. They were so good! My recipe for perfect tempeh (and tofu) will be up this week! 

Sunday was definitely our "fun day". T woke up early and made cinnamon buns for the girls. Little A has been asking for them so I grabbed a tin of Annie's organic ones (accidentally vegan) at Whole Foods for them. 

I on the other hand, had this Vigilant Eats oatmeal in the car on our way. These are so great for on the go! I am a smoothie person in the morning but when we want to be out early, this is perfect to eat in the car. 

We drove out to western New Jersey. We have done this almost every weekend this month! There is just such a great energy out there and lots of organic farms. Totally feels like you are in another state. This time we met up with my brother in law, sister in law and our nieces. Little A and her cousin are 2 years apart and are the best of friends. 


Next stop was an organic market! 

They had a huge farm with animals too. 

We left with lettuce, kombucha, dahlia's and shisito peppers.

On the way home, we stopped at an organic health food store where I had vegan potato salad. 

And a Sunwarrior protein bar which was pretty yummy!

When we got home, we grilled up our shisitos! (Obsessed!)

On the side some chickpea pasta with tomato sauce!
