Vegan Pasta Salad (vegan, gluten free, soy-free option)
2 boxes of gluten free pasta (I like Ancient Harvest quinoa pasta best)
Half a jar of Veganaise or any vegan mayo) I use the soy-free one)
1/4 cup of stone ground mustard
1 can of sliced black olives
1/2 red onion diced
4 carrots diced
4 stalks of celery diced
About 1/2 cup of chopped parsley
Sea salt, ground pepper, and garlic powder to taste
Cook pasta according to box and allow to cool in fridge for 3-4 hours. Once cooled, add all ingredients together in a bowl and mix well.
Let marinate in fridge for at least 2 hours.
