Here is what my 3 year old ate in a day:
Breakfast: a smoothie (spinach, Ripple unsweetened vanilla pea milk, chia seeds, bananas, peanut butter). Toast: one piece of Bread Alone whole wheat sourdough bread (half with peanut butter, half with Miyokos butter). Half a small container of blackberries. Coconut water. She eats a lot in the morning!
Lunch: spaghetti with marinara sauce sprinkled with some iodized sea salt. Iodine is an important mineral that vegans need to be aware of. My girls get from sea weed and the salt which I sprinkle on their food a few times a week. She also had carrots and hummus.
Snack after gymnastics: organic cinnamon toast whole grain cereal (dry) and a few sips of kombucha.
Another snack: a Little Ducks Organics strawberry beet bar (these are fortified).
Dinner: A bowl of lentils with kale, chickpeas, quinoa, carrots, celery, garlic, and onions.
Dessert: one small square of organic raw chocolate.
She also takes a My Kind Organics Multi Vitamin for Kids and Calcium vitamin D from Honest Brand. K2 drops are also put on her toast.
